The starter trio is NOT Grass-Fire-Water. Instead, it is Fighting-Fairy-Steel, but the starters GAIN the normal starter types upon their second evolution. Let's begin with the Fighting starter. Another breaking of old trends is that all of the starters have a 50-50 gender ratio.
Joeyfray: The Kangaroo Pokemon

Ability: Competitive
It shows distrust towards humans and Pokemon of the opposite gender. Despite this, it is not impossible for a male trainer to have a strong bond with a female Joeyfray, and vice versa.
It evolves at Level 15
Kangaikido: The Aikido Pokemon
Field/Grass Egg Group
Fighting/Grass-type
Ability: Competitive
It will ally with Pokemon of the same gender to drive Pokemon of the opposite gender out of its territory. It refuses to be touched by trainers of the opposite gender, but can soften up to them.
It evolves at Level 35
Battalaby: The Aikido Pokemon:
Field/Grass Egg Group
Fighting/Grass-type
Ability: Gender Aggression: Basically an inverse Rivalry. Deals more damage to Pokemon of the opposite gender but less to Pokemon of the same gender.
When a male tries to court a female, it will end up injured. Due to this, they have adapted to same-gender breeding.
Signature Move: Wild Kick: A Grass-type physical move. The Pokemon flails its foot around and kicks any Pokemon in the way. Deals more damage to Pokemon of the opposite gender.
Can breed with Pokemon of the same gender.
With the Adventurine it becomes.....
Mutated Battalaby:
Mutation has coursed through its veins, making it a much more potent fighter. Unfortunately, it becomes more passive towards Pokemon of the opposite gender and refuses to attack them.
Weakness: Becomes infatuated by Pokemon of the opposite gender.
Sharpaiku: The Steel Snake Pokemon:

Ability: Sharpness
While seemingly distrustful and forlorn, it opens up with time. It has a huge sweet tooth and is easily distracted by sweets.
It evolves at Lvl. 15
Snekredo: The Steel Snake Pokemon:

Steel/Fire-type
Ability: Sharpness
It is very protective and affectionate towards its trainer. Its favorite food is any type of sweets.
It evolves at Lvl. 35
Smitjiya: The Steel Snake Pokemon:

Steel/Fire-type
Ability: Wildfire: Guarantees a crit on any Fire-type moves.
It is a fierce fighter and protector, but easily lets its guard down around sweets. It is friendly towards all people and Pokemon unless they attack its trainer.
Signature Move: Heatwave: A Fire-type special move. The Pokemon lets out a hiss that summons fires all around the opponent and guarantees a burn.

Mutated Smitjiya:
It becomes dangerously powerful as a result of Mutation. However, it has no control of itself and will sometimes attack its teammates.
Weakness: In double battles, it has a chance to attack its teammate.
Spluggle: The Puggle Pokemon:
Fairy/Water 1 Egg Group
Fairy-type
Ability: Cute Charm
It is irresistibly adorable and sweet. However, if its friends are hurt, it will show no mercy to those who have hurt it.
It evolves at Level 15
Platypeace: The Platypus Pokemon:
Fairy/Water 1 Egg Group
Fairy/Water-type
Ability: Cute Charm
It spends most of its time in the water. When it comes out, it is usually a sign that it trusts you and wants to spend time with you.
It evolves at Level 35
Donotreme: The Monotreme Pokemon
Fairy/Water 1 Egg Group
Fairy/Water-type
Ability: Spiky Fur: The Pokemon pricks the opponent with its spiky fur every time the opponent lands a super effective or not every effective hit, causing the opponent to take damage.
Its fur is unusually spiky and sharp, so it's unsafe to pet. Otherwise, it is very friendly.
It doesn't have a signature move because its ability acts as one.
With the Spinel (No Steven Universe jokes please!) it becomes.....
Mutated Donotreme:
Despite the power gained from mutation, it hates fighting. Due to this, it will ignore commands to attack.
Weakness: Has a chance to ignore commands to use an attacking move, no matter how many gym badges you have.
