Why do Pokemon lay only ONE Egg? And why do Mammal-like Pokemon lay eggs?

Ok I'm back after a 3 month break and now I have a truckload of theories and questions.

I was wondering, why do Pokemon only lay ONE Egg? I mean, what's the problem with many eggs. Bird Pokemon should lay two to three eggs at least. Fish Pokemon should lay thousands.

Ok, I know that it's for in-game purposes but why? I mean at least a good 12 egg litter should be laid by a random Skitty. And also that it breeds with a Wailord and still produces ONE EGG.

And why do Mammal like Pokemon such as Donphan, Bewear and a hundred more lay eggs? Mammals don't lay eggs.

So, is it all "POKEMON LOGIC" or is there any DEEP theory?

When you think about it, the eggs are much too big for those Pokemon to lay without complications. Compare the size of Lillie’s Vulpix egg to a Ninetales, or Ash’s Riolu(probably) egg to a Lucario.
